The Mâconnais cheese: Introduction

The Mâconnais cheese is also called Chevroton de Maçon or Cabrion de Maçon. It is a rare, local cheese. Depending on the season, it can be made with either goat's milk or cow's milk.

The Mâconnais cheese takes the shape of a truncated cylinder and it weighs around 100 grams. The maturing process of the Mâconnais cheese lasts 2 weeks, but the longer the ripening, the harder and saltier the cheese becomes.

This cheese can be enjoyed fresh or aged. As for the odour, it has the scent of fresh grass.
