This farm made goat’s cheese represents the region in which it is made; the top face is decorated with the Occitan cross.

It is in the shape of a flat disc; it has a smooth, fine texture and weighs 200g.

Cathare cheese is unctuous and fine. It has a caprine flavour  which develops during the maturing process, which generally lasts for 2 weeks.
