Rachel

Rachel is a soft washed rind cheese, which the goat's milk version of Morn Dew, both are produced by the dairy White Lake, Somerset Co. This cheese is named after the cheesemaker's friend whose qualities are like that of the cheese: mild and curvy. The texture is soft and elastic; the rind is orange-red and becomes sticky after being washed.
