Skyr is a national cheese of Iceland. Each farm makes it own Skyr, with a base of whey from cow's milk. It is a lactic coagulation of skimmed pasteurized milk, drained and conserved in a cloth to drain it further. Before it is too firm, it is mixed with milk until it makes a creamy consistency, then sugar is added, and it is serve das a dessert. This recipe is very similar to 'lait ribot breton' (buttermilk). For some time, Skyr has been produced industrially under the control of the administration.
