Farmhouse cheeses

Designation reserved for cheeses produced exclusively from the milk of a specific herd in a specific area, and made in that same area. More generally, a farmhouse or farmstead cheese is made with raw milk as part of a small, artisanal operation using strictly defined, traditional methods.
