Lavort cheese can also be called “Medieval.”

Lavort is a recent discovery, created by the cheese maker Patrick Beaumont in the 1990s. It is not a very common cheese but is delicious.

Lavort is shaped into a disc with a diameter of 20cm and a thickness of 12cm; it resembles the look of a crater. It weighs 2kg.
 
The cheese is matured for 100 days on planks of fir tree. The fruity flavour of the cheese intensifies with age.

Lavort cheese is a dry cheese with a strong fragrance, with a light woody aroma.
