Cabri Ariegeois is very similar to Mont d’Or cheese; however the difference is that Cabri Ariegeois is made from goat’s milk. It weighs around 300g and is matured for generally 1 month.

It is normally eaten with a spoon. Its flavour is similar to that of Reblechon.  This cheese has an ochre coloured rind and a mild, sweet odour of resin and of the cheese cellar. The pate is white, creamy and fondant.
