Affidelis is the commercial brand name of a cheese from the society of Berthaut.

This cheese is a soft, washed rind cheese made from cow’s milk. It has a circular shape, with a diameter of 17 to 19cm and a thickness of 3 to 4.5 cm. It can weigh between 700g and 1kg.

During the maturing process, which lasts for 2 months, the rind of Affidelis is washed with white wine from the region of Chablis, this is what gives the cheeses its characteristics; an unctuous texture and a flavour of the ‘terroir.’
